I think this doesn't just affect the bakery trade, it affects all craft businesses that process food. A lot of things are possible digitally, for example documentation of the cold room temperature, if I already have a sensor then I can record that too. Or digital documentation of safety, hygiene and Corona instructions... Many of the employees at BGs and authorities have to move towards this and recognize these possibilities so that we don't remain as analogue as we were 75 years ago...Back to the Future

Small businesses particularly affected
Small businesses in particular suffered from unnecessary bureaucracy. For example, the obligation to document the cooling temperature in writing every day. This can be dispensed with if the bakery has automatic control mechanisms and can demonstrate what measures it takes to ensure long-term compliance with the minimum cooling temperature.
